Happy Hallowe'en!! Recipe Contest Results!

Happy Hallowe'en, Everyone!

The results are in and here's what everyone who's entered a recipe in the Less of Me Recipe Contest has been waiting for.... It was a tough decision for the judges and we had a three way tie for first place in the Main Dish category!

Recipe Contest Entry: Apples and Lemonade

Hi,
This is for portable apples followed by
some great Lemonade!
Slice one apple into a locable freezer bag.
Add one T of lemon juice. Add cinnamon
to taste. Shake to distribute the lemon juice
and spice.
When finished with the apple slices reseal
and when you get home pour the spicey
lemon juice into a glass, add stevia, water
and iced and enjoy!
If you don't like your apple slices tart,
you can add the stevia with the cinnamon.

1/4 cup apple cider vinegar

mix everything except the chicken in a bowl and let flavors marry for a couple hours.
Put chicken in a small baking dish
Pour tomato bruschetta on top
Bake in a 350 oven for 30-45 mins.

Recipe Contest Entry: Save Me From Takeout! Chicken Satay


Save Me From Takeout! Chicken Satay

1 Cup Nonfat Milk (you'll only use 1 TBS)
1/4 teaspoon Stevia
1/8 teaspoon red curry paste
1 teaspoon apple cider vinegar
Pinch of salt
1 teaspoon cold water
100 g chicken breast, cut in to small, thin chunks (I usually end up with 4 long thin pieces)
2 bamboo skewers, soaked in water for 20 minutes
Creole seasoning as needed
Instructions:

1. Sweeten the milk
Mix 1/4 teaspoon stevia with 1 cup of milk. Mix well.
2. Assemble the marinade
Take 1 TBS of the milk and add it to a ziploc bag. Save the rest of the sweetened milk for later.
Add the curry paste, vinegar, salt, and water to the bag.
Moosh the marinade together - the curry paste should be well mixed.
3. Marinate the chicken
Add the chicken in to the ziploc bag and moosh the marinade so that all pieces are covered. Let marinate for
about an hour.
4. Skewers
Make sure you've soaked the skewers for 20 minutes so they don't burn.
Thread the chicken on to the skewers (2 pieces per skewer works great for me)
5. Grill
Grill chicken on the george forman grill until done. You can also toss these on the BBQ if you'd like. It takes me about 3-5 minutes tops to get these grilled.
6. Finish and serve
Sprinkle with a dash of creole seasoning if you please.
SERVING SUGGESTION: Serve with pan-stir fried cabbage that has been seasoned with a dash of salt and a dash of
on protocol hot sauce and a grissini breadstick. Alternately, make the chicken curry soup recipe without the
chicken. Save your fruit for later.
Notes: My fiance loves anything "ethnic" and one of our favorite meals is chicken satay. While on protocol, I am so happy I can modify my usual recipe to give me similar flavors without needing to go grab off-plan take out. The chicken on the skewers makes me feel like I am eating quite a bit - must be a mind thing. If you don't have curry paste, use a little curry powder and a little cayane pepper.

Recipe Contest Entry: Family Pot Roast


This is one of those recipes that everyone in the family will enjoy, so you better make enough to share! Susan submitted this recipe with instructions for how to make it for a whole family as well as for yourself while you're on HCG. She also said that if you're cooking for just one or two people, "You could cut the pot roast up into 3.5 oz pieces and cook that way. So when it is done one piece would be the correct portion."

Family Pot Roast
(321 calories the way she served it)
Main Dish Entry from Susan F.
3-4 lb Organic very lean chuck roast (with your 100g raw cut so you know just how much to eat)
rub with garlic powder, salt and pepper
Brown in non stick pot on both sides (don't use anything to brown it)
Once browned cut one large onion and put in with roast
Add on cup of water
Add 1/4 cup of apple cider vinegar
cover and simmer for 2 hours
remove meat from the juices
pour juices into a bowl
skim all the fat off the juices and discard (there should not be too much)
Or you can refrigerate the juices and skim the fat off once it's hardened.
You can have 100 grams of meat (3.5 oz) with some of the juice on top 280 calories
About 1/4 of the stewed onions 10 calories
Steamed Asparagus 26 calories
1/4 cup vinegar 5 calories
Total calories: 321
Excellent leftover!

Recipe Contest Entry: Sausage Cabbage

Jackie says: "I am a crock pot fan so both are done in the crock pot Hope this at least gives you a few other recipes to add to your mix :)"

Sausage Cabbage (150 calories)

1 chicken sausage (no sugars or fats) 100 cal
2-3 cups cabbage 35-50 cal
1 clove garlic minced (or 1 t already minced)
2 t apple cider vinegar
1/2 t cumin
1/2 t onion powder
1 cube chicken bouillon
salt and pepper to taste
1-1 1/2 cup water
2 drops stevia (not really needed but can add for touch of sweetness)
Cut sausage into bite sized pieces, add to crock pot. Cut cabbage into pieces and put on sausage. Add garlic, acv, cumin, onion powder, bouillon, salt, pepper, stevia then pour water over cabbage.
Crock until cabbage is soft.

Recipe Contest Entry: Italian Wedding Soup


Italian Wedding Soup

Ingredients in order of use:

  • 1 T Minced Garlic (i used the minced in a jar)
  • 100 g Extra Lean Beef (season with 1T Canadian Steak Seasoning and 1 t Onion Powder, pinch of salt)
  • 1 T Homemade or Rachel Ray's All Natural Beef Stock
  • Couple shakes of Worcestershire
  • 1 T Dehydrated Onion Flakes
  • 1 T Fresh Rosemary finely chopped (obviously you can use dried rosemary, lessen the amount if you're not a fan or omit altogether)
  • 1 1/2 cups Homemade or Rachel Ray's All Natural Chicken Stock...you can always mix Veg and Chicken stock half and half for a milder stew....also add less or more stock depending on how you like it)
  • Couple shakes of Ms. Dash (no need to be exact on any of these!)
  • Couple shakes of Italian seasoning (find one w/ no sugar!)
  • 1 t Sambal Oelek (if you like it spicy, if not, just omit...Hot Sriacha sauce would work too...both can be found in the Asian aisle at your Supercenter)
  • 1 T Red wine (i love it for flavor and i figure 1T is ok since the alcohol will burn off...omit if you want)
  • 2 cups fresh spinach leaves


Preparation instructions:

Preheat pot over medium-high heat and add garlic

Work the Canadian Steak Seasoning, onion powder and salt into your beef. Roll into small sized meatballs
Add meatballs to pan and begin browning

To prevent scorching, I added a tbsp of beef broth and a couple shakes of Worcestershire, continue browning the meatballs
Add the onion flakes and rosemary followed by your broth....i figure all beef broth would be overpowering so the chicken or veg broths seem to work better.

Bring to a low boil.
Add Ms Dash, Italian Seasoning, Sambal Oelek and red wine

Reduce heat to a simmer and let cook until meatballs are cooked through and spices have melded together.
Add spinach.

Simmer for a couple minutes more before serving.

I've become a huge fan of soups as they are not only tasty, but so filling! I've found that they make great bases and are easy to experiment with in terms of various spices...Enjoy!!! ; )

  • A sweet and tart chutney recipe for the roast beef.
  • Easy carry meals (for when you're away from home).
  • Use some "unusual" spices - maybe Mediteranian? Lebanese? Japanese? German? Native American?
  • Use some unusual liquids (Zevia, Tea, Coffee)

Desert recipe ideas:
  • Orange glaze over an orange
  • Raspberry jam
  • Spiced Grapefruit
  • Use some unusual liquids (Zevia, Tea, Coffee)
Again, I really hope you aren't intimidated by the recipes I post here - use them as inspiration or a jumping off point for something that you put your own "stamp" on. Use them to help rather than hold you back. We've all got different cooking backgrounds and places our families come from - pull from that (your Mom/Aunts/Grandmas/Dads/Uncles/Grandpas) and experiment!

Recipe Contest Entry: Buffalo Chili



Lest you all think I'd leave you hanging for lunch menus (And I may someday! ACK! You'll all be lunch repeaters!), Jackie sent pictures for her buffalo chili so I can post them today. Hurray! It sounds like a wonderfully easy recipe that could be done at work, provided you cooked the buffalo first. It would make everyone sooo jealous. :) They'll all want to be on HCG with you.



Buffalo Chili

100 gr Ground Buffalo (100 calories)
1 c tomato cut into bite sized pieces (65 calories)
1 1/2 t minced garlic
1/2 t cumin
1/2 t oregano
1 chicken bouillion cube
1/2 t chili powder (more if you like spicier)
dash of red pepper flakes or ground red pepper
1/2 t onion powder
salt and pepper to taste
1 cup water
Dry fry ground buffalo till almost cooked, add to crock pot. Add all rest ingredients to crock pot and let cook until done.

Recipe Writing Contest: Savory Chicken & Apples, Garlic Zucchini

This afternoon's lunch was absolutely FANTASTIC!! I'm sharing a recipe that I got from my Recipe Writing Contest. I can't sing it's praises loud enough - YOU MUST TRY THIS, EVEN IF YOU DON'T THINK YOU'D LIKE IT!!

Savory Chicken & Apples (190 calories)
100g chicken (110 calories)
1 sliced apple (80 calories)
10 drops toffee stevia
1/8t salt
1/4t butter buds
just a sprinkle allspice
1t jalapeno
1T milk
Pound out chicken so it's very thin. Place chicken in bottom of a ramekin.
In small bowl, add stevia, salt, butter buds, allspice, jalapeno, milk and mix together. Add apples to the mixture, then toss to fully coat them. Pour apple mixture on top of chicken in ramekin and bake 20 minutes at 350* then broil another 15 minutes. While cooking, make both the Garlic Zucchini and Balsamic Vinegar Sauce, below:

Garlic Zucchini (20 calories)
zucchini (1c=20 calories)
3 cloves garlic, cut in half
1t tomato-chicken bullion
Add bullion to water in steamer and bring to boil, add zucchini and garlic and allow to steam.

Balsamic Vinegar Sauce
1/4c balsamic vinegar
2 drops toffee stevia
Reduce this by putting it on the stove and bring it to a boil, then pick up the pan and swirl it around to check the viscosity. You want it thicker but not to cook it so long that it turns into a hard "candy."

When everything is ready, place apple chicken on one side of your plate, the zucchini on the other. Top the apple chicken with the Balsamic Vinegar Sauce and enjoy hot.



Jay's Note: If you are going to choose a different veggie, make sure you choose one that's pretty bland, as this dish has a LOT of flavor.

Recipe Writing Contest: Strawberry (Forgo the Tequila) Margarita


This is the other recipe that Jennifer submitted to the contest - no pictures yet, but soon, she promises!

Strawberry (Forgo the Tequila) Margarita (28calories)
6 strawberries
Juice of 1/2 lime
1 1/2 packet Sweetleaf
4-5 ice cubes
Slice strawberries into chunks so they get down into the blender blades. Add a healthy squeeze of lime juice. Add the Sweetleaf. Blend until good and smooth. Add in ice cubes one and two at a time until your desired consistency...too much ice could make it watery so try it with 4 or 5 max and then go from there. Pour into a tall glass and garnish with a fresh lime wedge. You could also rim the glass with some lime and a little Truvia for a little extra sweet/sour!

Chicken (Forgo the) Tortilla Soup
245 calories w/ the Grissini Breadstick

3 On the vine tomatoes
1 T Minced garlic
1 T Dehydrated Onion Flakes
1 T Onion Powder
1 T Cumin
1/4 t Red Pepper
1/4 t McCormick's Rotisserie Chicken Seasoning
Pinch of Sea Salt
1/2 t Black Pepper
2 T Liquid Aminos
1/2 Cup Homemade or Rachel Ray's All Natural Chicken Stock
4 T Fresh Cilantro
100 g cooked/shredded chicken breast
Preheat pot over medium-high heat. Blanch 3 tomatoes in boiling water, drain and drench in cold water, peel skins and crush in the pot with your fingers or fork. Add minced garlic (i use the kind in the jar), onion flakes and powder, cumin, chili powder, cayenne, rotisserie chicken seasoning, salt and black pepper. Continue to crush the tomatoes to your desired consistency with a fork. Add 1-2 tbsp liquid aminos (you don't have to be precise...I just throw a bit in for good measure). Add 1/4-1/2 cup Chicken Stock..again, just add enough to make it the consistency and flavor you desire. You can make your own. I use Rachal Ray's as it is All Natural with no sugar added. Add 2 of the 4 tbsp of fresh chopped cilantro. Bring to low boil. Reduce
heat to a simmer and add chicken. Simmer for 10 minutes more. Stir in last bit of cilantro before serving. Serve with your Grissini breadstick on the side or break into 1" pieces on top like traditional tortilla soup...so good!!!

Foods allowed in each recipe are pretty strict, so here's an overview of them:

1 grissini (they're more like bread pencils, but about twice as long as a pencil)

Each meal is 250 calories. The meat, breadstick, and fruit calories are added up then subtracted from the 250 allowed and the rest is consumed in the vegetable.

Spices (any spice) are allowed in any amounts.
1 T milk, if desired.
Juice of 1 lemon, if desired.
Celtic Sea Salt is the only salt allowed.
Sweet Leaf Stevia is the only sweetener allowed.

Entrants agree that the Event Organizers, their parent, subsidiaries and affiliated companies, prize suppliers, advertising and promotion agencies, and their respective parent and affiliate companies, suppliers, printers, distributors, and the respective officers, managers, members, directors, employees, representatives and agents of each and any other person or entity related in any way to this Contest (collectively, the “Contest Entities”) will have no liability whatsoever for, and shall be held harmless by Entrants against, any and all liability for any injuries, loss or damage of any kind to persons, including death, or property damage resulting in whole or in part, directly or indirectly, from acceptance, possession, misuse or use of any prize, participation in this promotion, or while traveling to, preparing for or participating in the Cook-off or any related activity. The Contest Entities expressly disclaim any responsibility or liability for injury or loss to any person or property in connection with the delivery and/or subsequent use of the Prize, or any portion thereof, awarded.

Sponsor reserves the right, at its sole discretion, to disqualify any individual it finds to be tampering with the entry process or the operation of any of the Contest; to be acting in violation of the Official Rules; or to be acting in an unsportsmanlike or disruptive manner, or with intent to annoy, abuse, threaten or harass any other person. CAUTION: ANY DELIBERATE ATTEMPT BY AN ENTRANT OR ANY OTHER INDIVIDUAL TO UNDERMINE THE LEGITIMATE OPERATION OF ANY OF THE CONTEST IS A VIOLATION OF CRIMINAL AND CIVIL LAWS AND SHOULD SUCH AN ATTEMPT BE MADE, THE SPONSOR RESERVES THE RIGHT TO SEEK DAMAGES FROM ANY SUCH PERSON TO THE FULLEST EXTENT PERMITTED BY LAW.
