Recipe Writing Contest: Savory Chicken & Apples, Garlic Zucchini
This afternoon's lunch was absolutely FANTASTIC!! I'm sharing a recipe that I got from my Recipe Writing Contest. I can't sing it's praises loud enough - YOU MUST TRY THIS, EVEN IF YOU DON'T THINK YOU'D LIKE IT!!

Savory Chicken & Apples (190 calories)
100g chicken (110 calories)1 sliced apple (80 calories)
10 drops toffee stevia
1/8t salt
1/4t butter buds
just a sprinkle allspice
1t jalapeno
1T milk
Pound out chicken so it's very thin. Place chicken in bottom of a ramekin.
In small bowl, add stevia, salt, butter buds, allspice, jalapeno, milk and mix together. Add apples to the mixture, then toss to fully coat them. Pour apple mixture on top of chicken in ramekin and bake 20 minutes at 350* then broil another 15 minutes. While cooking, make both the Garlic Zucchini and Balsamic Vinegar Sauce, below:
Garlic Zucchini (20 calories)
zucchini (1c=20 calories)
3 cloves garlic, cut in half
1t tomato-chicken bullion
Add bullion to water in steamer and bring to boil, add zucchini and garlic and allow to steam.
Balsamic Vinegar Sauce
1/4c balsamic vinegar
2 drops toffee stevia
Reduce this by putting it on the stove and bring it to a boil, then pick up the pan and swirl it around to check the viscosity. You want it thicker but not to cook it so long that it turns into a hard "candy."
When everything is ready, place apple chicken on one side of your plate, the zucchini on the other. Top the apple chicken with the Balsamic Vinegar Sauce and enjoy hot.
Jay's Note: If you are going to choose a different veggie, make sure you choose one that's pretty bland, as this dish has a LOT of flavor.
