Herb the Halibut
Tonight is a simple night to honor Herb. Herb, the Halibut, that is. We kept it simple so the seasonings wouldn't overwhelm the fragile flavors, broiling it just so the fish became flaky. We had it with a garlic grissini and summer squash.
Herb the Halibut (100 calories)
100g halibut fillet (100 calories)
1/4 lemon
1t sea salt
1 clove fresh garlic, minced
1T dill weed
Rinse the fish and pat dry. Place in center of 8" square of foil and squeeze the juice from the lemon over the halibut. Season generously with salt first, then garlic, then the dill.
Broil about 8 minutes in toaster oven, until the fish is opaque and can be flaked with a fork. Keep in mind that your actual broiling time will vary with the thickness of your fish, so check often! Garnish with lemon slices. Serve with tomato slices, broccoli, or asparagus.
