Recipe Contest Entry: Family Pot Roast


This is one of those recipes that everyone in the family will enjoy, so you better make enough to share! Susan submitted this recipe with instructions for how to make it for a whole family as well as for yourself while you're on HCG. She also said that if you're cooking for just one or two people, "You could cut the pot roast up into 3.5 oz pieces and cook that way. So when it is done one piece would be the correct portion."

Family Pot Roast
(321 calories the way she served it)
Main Dish Entry from Susan F.
3-4 lb Organic very lean chuck roast (with your 100g raw cut so you know just how much to eat)
rub with garlic powder, salt and pepper
Brown in non stick pot on both sides (don't use anything to brown it)
Once browned cut one large onion and put in with roast
Add on cup of water
Add 1/4 cup of apple cider vinegar
cover and simmer for 2 hours
remove meat from the juices
pour juices into a bowl
skim all the fat off the juices and discard (there should not be too much)
Or you can refrigerate the juices and skim the fat off once it's hardened.
You can have 100 grams of meat (3.5 oz) with some of the juice on top 280 calories
About 1/4 of the stewed onions 10 calories
Steamed Asparagus 26 calories
1/4 cup vinegar 5 calories
Total calories: 321
Excellent leftover!
